3 large eggplants
3 tbsps tahini
lemon juice to taste
salt to taste
Method of preparation:
Bake eggplants in the oven and peel. When cool, make a puree with a blender with tahini, lemon juice and salt.
Appetizer can be served sprinkled with pomegranate seeds, red pepper and parsley.
