Chicken With Walnut Sauce


1 whole chicken
olive oil
1 onion
2 cloves of garlic
50 g butter
1 l. Broth
2 tablespoons flour
2 cups ground walnuts
4 tsp saffron
2 tsp fenugreek
2 tsp coriander


Wash chicken and place it in a pressure cooker.

Sprinkle with salt and pepper. Pour with a little olive oil , pour water, almost enough to cover it and boil it for a whole half hour.

After falling pressure carefully remove the chicken on a board and using the devices cut it into parts –tights , chest, etc.

Strain into a bowl a liter of broth.

Chop finely the onion and garlic. Leave them aside.

Heat some olive oil in a deep pan and fry the pieces of meat on both sides until they got a golden color and a crispy crust.

Remove them to a plate.

Put in the same pan onion and garlic a piece of butter and pour a little water to stew them. When tender, pour the broth into the pan and stir.

Stir the flour into a bowl along with some of the broth until there is no lumps and pour into the pan.

Stir on a low heat.

Pour finely ground walnuts and add spices.

Put pieces of chicken in sauce. Stir.

After a few minutes remove from heat.

When serving lightly sprinkle with crushed parsley.
