A famous Bulgarian recipe .One of my favorite.
500 g. Peppers suitable for roasting , the best are Piquilla
200 gr. Cheese
1. tbsp. Chopped fresh parsley
3 tbsp Flour
3 tbsp Breadcrumbs and flour batter
100 ml. cooking oil
Roast the peppers very well. Put them in a plastic bag and leave them to cool.
Peel the pepper and very carefully clean from the seeds. It is very important not to harm the peppers. Otherwise the stuffing will leak.
Grate the cheese, add 2 eggs, the parsley and stir well.
Fill the roasted pepper with this mixture. Use a tea spoon. Flatten the peppers by hand. If a part of the stuffing is out, just remove it. It indicates that it is slightly in excess.
Prepare in 3 different plates flour, the third egg beaten and breadcrumbs.
Coat each pepper very well first in four, then dip in the beaten egg and finally inn breadcrumbs.
Heat the oil in a pan at maximum degree. Fry the peppers. When you first put the peppers in the pan reduce the power by half.
Turn the peppers carefully, using two blades. Never by a fork. It will hurt peppers and stuffing will leak. Frying peppers lasts about 7-8 minutes.
Remove the ready pepper burek on paper towels to drain excess fat.
Pepper byurek are served hot with some garlic sauce or fresh salad.
