Caponata alla Siciliana : An Italian meal

 Caponata    alla Siciliana


Caponata is a vegetarian   meal, originated  from the island of Sicilia. There are many  different recipes  for it. All of them  are based on eggplants like a main ingredient. The following  recipe was given to me by a friend of mine, who used to live in Italy for 10 years. Italians eat  caponata as a starter and usually it is served cold.
Ingredients :

5 eggplants medium sized

200gr green olives

100gr capers

100gr celery

3 onions

150 gr tomato concentrate

100gr sugar

1 coffee cup vinegar

3gr bitter cocoa/if you wish/

olive  or sunflower  oil.

Caponata    alla Siciliana

Dice the eggplants and salt them to take the bitterness  out.

Fry  them  until they are ready, take out, then  fry the chopped onion.

Chop the celery and put it in boiling water with pitted olives and capers.

Boil for a while.  When the celery is almost ready take the vegetables out and wash with running water.

Put  everything on a big pan, add the tomato concentrate, sugar, vinegar  and cocoa.

Stir with  a  wooden spoon.

Take out  from the fire in ten minutes, add some salt. Garnish with some chopped parsley .

Serve cold.
