Lyutenitza :Bulgarian vegetable spread
Lyutenitza (Bulgarian:Лютеница ) is essentially Bulgarian salsa. It’s a condiment typically eaten straight from the jar or with bread. There are a lot of
varieties of the recipe and is usually made of tomatoes, bell peppers, hot peppers ,eggplants, carrots, onion, garlic, sunflower oil, sugar, black pepper,
salt. The choice of vegetables is optional. It’s the favorite snack of Bulgarian kids. I’d like to share one of the easiest recipes here.
20 lbs/10kg red peppers
4lbs/2 kg tomatoes
2 1/2 cups oil
2 cups sugar
20-25 chili peppers, assorted/optional/
1/3 cup salt
Bake the red peppers, peel and seed, and grind coarsely.
Cut the tomatoes in 4-5 pieces each, grind and toss with the peppers in oil, fry for about 10 minutes.
Add the sugar and the salt, add some water and simmer until the mixture thickens.
Half way through, add the ground chili peppers.
Put in jars and sterilize them. Eat cold.
