Lemon Chicken

Lemon Chicken

Cooking time 1 hour
Serves 4

Ingredients :

4 boneless, skinless chicken breasts; pounded to 1/4″
1/3 cup All purpose flour
1/4 tsp pepper
2 tbsp butter
1 cup chicken broth
1/4 cup lemon juice
1 tbsp corn starch
2 green onions

Directions :

Place each chicken piece, boned side up, between 2 pieces of plastic wrap

Pound lightly with a meat mallet to 1/4-inch thickness

Remove plastic wrap

In a shallow dish, stir together flour and pepper

Lightly coat each piece of chicken with flour mixture

In a large skillet, cook chicken in hot butter or margarine over medium heat for 4 to 6 minutes or until chicken is tender and no longer pink,

turning once

Remove from skillet; keep warm

For sauce, in a small bowl, stir together chicken broth, lemon juice, and cornstarch. Add to skillet. Cook and stir until thickened and bubbly.

Cook and stir for 2 minutes more

Stir in green onions

To serve, spoon the sauce over chicken .
