Indian Cassava Soup


Indian Cassava Soup Cassava roots are also called tapioca roots and are an excellent source of fibre, starch, vitamins and minerals. With its nutty flavour, cassava goes well with potatoes, yam and other vegetables. Try this healthy cassava soup this summer and get energised instantly. Ingredients: • Cassava peeled and cut into small pieces • Coconut oil 1 tsp • Onion 1 • Garlic 4 cloves • Ginger ½ inch • Salt to taste • Sugar 1 tsp • Pepper • Chicken small pieces ¼ kg • Carrots, cut into small pieces 2 • Celery 2 stalks Instructions: 1.Heat some coconut oil in a pan. Add finely chopped onion, garlic, and ginger and sauté. 2. Add salt, a little sugar and pepper. 3. Add the chicken pieces and mix well. 4.Add the boiled cassava, followed by carrots and celery. Leave until cooked and the soup is ready to be served.
