Mediterranean Shrimp & Rice

Serves : 2
2 cups Brown Rice; Cooked
12 ounces Shrimp; Raw
1 each Red bell pepper; Chopped
2/3 cup Scallions; Chopped
1 ounce Feta Cheese; Low-Fat
4 tablespoon Balsamic Vinegar
1/2 teaspoon Old Bay; If Wanted (If Shrimp Raw)
1 clove Garlic; Chopped (if Shrimp Raw)
1/8 teaspoon Salt; To Taste
1/8 teaspoon pepper; To Taste
Peel, Thaw, & Remove Tail on Large Shrimp.
Season Shrimp with Salt, Pepper, Old Bay, & Garlic. Steam in steam basket for 2-3 minutes or cook in a frying pan until pink.
Chop peppers & Scallions.
In a pan on medium-low add Peppers, Scallions and heat to warm. (Do not saute)
Once shrimp is cooked, add feta, shrimp, balsamic vinegar and rice to pan.
Mix to warm. Do not cook.
