Kazanlak Doughnuts

A delicious Bulgarian snack , great for both morning and afternoon coffee. Kazanlak is the capital of so called The Rose Valley.


100 ml of fresh milk
2 large eggs (not cold)
100 g of soft butter
1 tablespoon of honey
1 tsp of dry yeast (Dr. Yotker)
2.5 – 3 cups of sifted flour (240 ml capacity)
pinch of salt
a pinch of sugar



Mix all ingredients without flour and yeast .

Gradually add the sifted flour together with the yeast.

You should obtain a soft, not a hard dough.

Cover and leave warm for about an hour.

The other option is to make it in the bread machine, as I did.

Follow the same way with the products and turn on the Dough program.

Until it’s completed, the dough has doubled.

Its look is like a cloud of silk – fluffy, soft and it’s a real pleasure to touch it!

Once dough is well, roll out thicker – about 1 cm. Cut the doughnuts with a cup and a suitable smaller blade.

Fry in a lot of oil (in an oil bath) to shape well.

And because the dough is not very sweet, it can be combined with both powdered sugar, jam or liquid chocolate and nice cheese.
