Saratov has its own symbol – Kalatch. It is a special kind of bread known since XIX century. Kalatch is extremely soft and keeps its freshness for a long time. Saratov bakers have their own secret of its preparing, that is why their kalatch is 40 cm high and it can be pressed up to a thin cookie.
1 kg of flour
15 g of dry yeast
20 g of sugar
20 g of salt
20 g of margarine
200 ml of water
100 g of water
3 g of soda
5 g of salt
Mix 250 g of flour with water and yeast.
Leave it for 3 hours.
Salt, sugar and margarine are added to the prepared leaven.
Stir and finally add the remaining flour.
Mix the dough and let it rest for an hour.
Then mix and shape as small cakes.
Mix the products for the coating and carefully pour each loaf.
Bake the preheated 200 degrees oven for 20 minutes.
Then we drop to 160 degrees and leave to bake an hour.
