Chomlek From Bansko: A Special Recipe
Bansko is a large ski center in Bulgaria.You can try it when visiting it. Imagine you sitting near the fireplace in a cozy national pub called “mehana” and trying some local delicious meals after a cold winter day spent on ski tracks.
2 kg beef / veal knuckle better/
1 kg of potatoes
5-6 of Onions / 300 g/
10 cloves of garlic
2 hot peppers –
1 tablespoon of paprika
15 grains of black pepper
2 bay leaves
salt to taste
Cut the veal knuckle into large pieces and soak in water with a little vinegar for an hour.
In a large ceramic pot put layer of potatoes cut into large pieces or circles , veal cuts, chopped onions, peeled garlic cloves and hot peppers.
Add paprika , bay leaf and salt to taste.
You can also add some warm water.
Cover the pot with the lid and put it in the oven to roast for 4 hours.
