Stuffed Zucchini Boats
Today I would like to share with you one of my favorite zucchini recipe .It is a perfect summer meal, tasty and light.
Ingredients:
5 young zucchini /15-18 cm long/
500 g minced meat
1 big onion
200 g sour cream
200 g cheese /better yellow/
Spices /cumin, black pepper, salt/ to taste
4tbsps of oil
Instructions:
Cut the zucchini in half lengthwise.
Scoop them out like boats.
Boil* the zucchini for a while not too much.
Chop the onion finely and stew it with the zucchini flesh until almost no water left.
Add the minced meat and go on frying until ready, no water must be left.
Add spices to your taste.
Fill in the boats with the fried mixture, spread some sour cream on minced meat.
Finally great the cheese and sprinkle on top.
Bake at 200 C for about 30 minutes.
Serve warm or hot with some salad.
*It can be done without boiling too .Just bake the boats for 20 minutes in a pan with little water.
