A very tasty and easy appetizer.
about 1/2 kg. potatoes,
White brined cheese,
3 boiled eggs,
black (or brown) pitted olives,
1 fresh cucumber (or gherkins in winter)
1 bunch spring onions,
3 tablespoons (heaped) mayonnaise
pepper and salt to taste
Boil the potatoes in salted water, peel them and mash them still warm with a manual press or fork.
Do not overdo with crushing much they should be more rough, not smooth and silky, as mashed potatoes.
Grate cheese and cooked eggs.
Fresh cucumber is peeled, cut into small cubes by removing seminal part, Salt it and leave in a colander or large strainer for 15-20 minutes to drain the water. So it will not dilute your salad. If you prepare this salad in the winter, you can use gherkins, which must be well drained from water in the jar and grate on large grater or cut into very small cubes.
Cut very fresh chopped onions, parsley and dill.
Cut olives into julienne.
Add to mash potatoes grated cheese and eggs, cucumber, chopped onions, parsley, dill and olives.
In a bowl pour mayonnaise, add pepper and salt (if necessary) and mix well. Add to the salad.
Everything is mixed very well.
Shape the mixture as meatballs and decorate as you wish.
