Chihiritma: Georgian Chicken Soup
Chicken – 1
Egg yolks – 5
Onions – 250 grams
Vinegar – 50 grams
Melted butter – 100 grams
Condiments – salt, black pepper, peas, bay leaf
Herbs and roots for soup – to taste
Cook broth with chicken . Half an hour until cooked add the coarsely chopped roots and spices.
Cooked chicken removed from the broth and chop into pieces.
Finely chopped onion is fried in butter and add the broth, cook for 5-10 minutes more.
In a small bowl mix egg yolks with salt and vinegar, stir and pour a thin stream of 3-4 ladle of broth, stir well.
After removing from heat, pour the egg mixture into the soup and mix thoroughly.
Optionally add the greens.
