Shkembe Chorba:Tripe soup
A very famous Bulgarian soup. Actually it is preferred mostly by men.
beef tripe – 1 kg
milk – 1 liter
oil – 2 tbsp
butter – 2 tbsp
paprika – 1 1/2 tsp
Garlic – 4-5 cloves crushed, for serving
vinegar – about 100 ml of presentation
Red pepper – cayenne
Wash and clean the belly.
Put it to be cooked in a pressure cooker for about 50 minutes after boiling or a little more. If you do not have a pressure cooker, cook it in a plain pot for about 3 hours or until tender well.
Remove the belly, wait to cool and cut it into small pieces.
Leave the broth to cool well and remove the formed tallow top.
Strain the broth.
Heat the butter and oil in a saucepan and fry the red pepper briefly.
Top up gradually while stirring the milk, followed by 1 liter of beef bouillon.
Once boil, add salt to taste and chopped tripe.
Allow to boil for 5 minutes and remove from heat.
Crush or press the garlic and dilute it with about 100 ml of vinegar.
Serve this garlic supplement in the bowl to belly with chilly pepper in another bowl.
