Australian Chop Suey
Cooking time 35 minutes
400 grams minced beef
2 tablespoons butter
1 small onion; chopped
400 grams cabbage; shredded
1 large carrots; very thinly sliced
Salt & Pepper; to taste
2 teaspoons curry powder
1 (45 gram) packet chicken noodle soup mix
3/4 cup long grain rice
4 cups hot water
1 (225 gram) can pineapple pieces
Melt butter in a large pan add chopped onion, cabbage and carrots – cook until glassy.
Add minced beef to the pan and cook until well browned.
Add curry powder and allow to cook for a minute then add salt and pepper to taste and soup mix.
Combine well then sprinkle rice over the mixture and add the hot water.
Simmer for about 15 minutes stirring occasionally until most of the water has been absorbed.
Add in the pineapple with its juice and simmer a few more minutes to heat through and reduce a little.
