Thyme Chicken and Rice Skillet Dinner

Thyme Chicken and Rice Skillet Dinner

Cooking time 40 minutes
Serves  4

Ingredients :

4 boneless skinless chicken breasts
2 teaspoons dried thyme
Salt; to taste
2 tablespoons olive oil
1 onion; chopped
1 large carrot; chopped
3 cloves Garlic; minced
1 can chicken broth; 14.5 oz
1 cup rice
1/4 cup fresh parsley; chopped
1 whole Bay leaf
1 teaspoon dried basil

Preparation :

Generously sprinkle both side of chicken with salt and thyme.

In a large skillet, heat olive oil over medium heat. Brown chicken on both sides. Remove from pan and set aside.

Saute onions and carrots in olive oil until tender. Saute garlic for 30 seconds.

Stir in remaining ingredients. Place chicken back in skillet on top of rice. Cover and simmer for 20 minutes, or until the rice is tender and the

liquid is absorbed.
