This is an Indian low-fat recipe that is made with whole wheat flour and low-fat paneer (cottage cheese).

Makes 5 parathas
• 1 cup whole wheat flour (gehun ka atta)
• 1 1/2 tsp oil
• Salt to taste
For the stuffing :
3/4 cup crumbled low-fat paneer (cottage cheese)
1 tsp finely chopped green chillies
1/4 tsp turmeric powder (haldi)
1/4 tsp dried fenugreek leaves (methi)
3 tbsp chopped coriander (dhania)
Salt to taste
Combine all the ingredients for the dough. Knead them together into a soft, smooth dough, using enough water.
Divide the dough into five equal portions. Keep aside.
Mix the ingredients of the stuffing together and divide into five equal portions. Keep aside.
Roll out one portion of the dough into a circle of 75 mm. (3″) diameter, using whole wheat flour for rolling.
Place one portion of the stuffing in the centre of the circle. Bring the edges of the dough together and pinch them to seal the ball tightly.
Roll out again into a circle of 125 mm. (5″) diameter, using whole wheat flour for rolling.
Cook on a hot tava (griddle), using a little oil, till both sides are golden brown in colour.
Repeat with the remaining dough and stuffing to make four more parathas.
Serve hot with curd and pickle.
