Pasta with Sausage, Fennel & White Truffle Oil

Original recipe makes 6
8 oz dried pasta
1 lb sweet italian sausage
2 tbsp olive oil
1 small onion; dice
2 cloves Garlic; minced
1 bulb fennel; sliced
1 cup baby bella mushrooms; sliced
2 tbsp fresh parsley; chopped
salt & pepper; to taste
White truffle oil; to finish
parmesan reggiano cheese; grated
Cook pasta according to package directions .
Meanwhile, cook sausage throughly over med hi heat .
Drain and set to the side .
In a skillet, over med heat, add the olive oil .
Saute the onions, fennel and garlic until the onion is translucent .
Add mushrooms and saute until mushrooms are tender .
Return sausage to pan, add parsley; salt & pepper to taste .
Plate pasta, top with meat mixture, drizzle with truffle oil and grate parmesan over top .
