This is a pretty standard guacamole. Mostly you just need a really good avocado, some excellent fresh Salsa Mexicana, a few spices … mix, mush and serve!
3 whole (400g) avocados, peeled, seeded and chopped
1 cup (225g) salsa mexicana /recipe given bellow/
1 tsp (2g) cumin seed, ground
1 tsp (2g) coriander seed, ground
2 tbsp (30.5g) lime juice, freshly squeezed
salt and fresh cracked pepper, to taste
2 large tomatoes, chopped
4 jalapenos, seeded and chopped
2 small white onions, chopped
2 garlic cloves, peeled and minced
18 sprigs cilantro, chopped
1 teaspoon salt
2 teaspoons lime juice or 2 teaspoons cider vinegar
1 Toss tomato, jalapeno, onion, garlic, and cilantro together.
2 Add salt and lime juice (or cider vinegar).
3 Stir, and let stand 30 minutes before serving.
