Kleftiko: A Cyprian Recipe for Lamb With Potatoes

lamb meat – 1 kg
garlic – 1 head
cheese – 100 g kefalotiri cheese or just plain yellow cheese
olives – 15 pitted
Potatoes – 1 kg, fresh, young
peppers – 2 roasted and peeled
olive oil – 5 tbsps
parsley – 2 tbsps
oregano – 2 tbsps
rosemary – 2 tbsps
cumin – 1 tbsps ground
lemons – juice of 1 lemon
Lard the lamb meat with cloves of garlic, making small incisions and inserting garlic in them .
Then the meat is marinated with olive oil, chopped parsley, oregano, rosemary, cumin, salt, pepper and lemon juice.
Cover it well and leave it for one night in the fridge to spice.
The next day, transfer the meat to a large greased pan, cover with foil and put to roast for 3-4 hours.
After 2-3 hours remove the foil and add the whole cleaned potatoes with grated cheese, olives and sliced peppers.
Pour a cup of hot water, season with salt and pepper, place the foil and return again to roast until the dish is ready.
